Meticulous manual harvesting

The journey to excellence begins in our vineyards. Over a six-week period, a dedicated team of 25 people hand-pick each bunch, taking particular care to preserve the quality of the grapes. These precious fruits are then gently transported to the cellar in small buckets, to preserve their freshness and integrity.

Winemaking: a marriage of tradition and innovation.

Vinification at Château Bon Baron is a subtle blend of ancestral traditions and innovation. Each stage, from gentle de-stemming to fermentation in stainless steel vats and wooden barrels, is guided by gravity to minimize mechanical intervention. This meticulous method preserves the elegance, fruitiness and finesse of the grapes. Several times a day, our team carefully monitors temperatures and fermentation progress to guarantee the optimum quality of our wines.
